A great pig roast starts with quality pork. Chef Christopher Walker sources the pig from the best farm. He then marinates the whole pig for three days. The spice rub is black pepper, chipotle, fennel, coriander, mace, nutmeg, white pepper, ginger, garlic, brown sugar, and citrus.
The whole pig is cooked in a La Caja China. For a total of four hours, then flipped to allow the skin to crisp.
Chef Walker will carve the pig. While the pig is roasting Chef Walker will roast vegetables and sides. Pig sizes differ depending on the size of your party. For a party of twenty people a pig range of 25-30 pounds is recommened. There is no limit to the pig that Chef Walker can roast. Prices start at $1400.
